I make a simple marinara sauce and put cut-up pieces of cauliflower in it and simmer until done, sprinkle grated cheese on it and serve as a side dish. I have also cooked some ziti or spaghetti and put it in the marinara sauce with the cauliflower and you can serve this as a first course.
The second way is to par boil a head of cauliflower, drain it and put it in a baking dish. Put Italian seasoned breadcrumbs over it, trickle olive oil over the breadcrumbs with grated cheese, and bake in a 350-400 degree oven 1/2 hour or until tender. This is a very tasty side dish with meat.
You can also par boil the cauliflower in pieces, coat them with egg, dip them in flour seasoned with salt, pepper and paprika or seasoned breadcrumbs and saute them in vegetable oil. Drain on paper towels. Enjoy!
You can make a white sauce. (butter, flour and milk) put the cooked cauliflower in a pan, cover the top with your favorite grated cheese, pour the white sauce on top, sprinkly a little paprika for color and bake.
cook in a 350 degree oven until cheese melts and everything is warm and bubbly.
We have this creamed cauliflower every Thanksgiving. It is always one of my side dishes. Any vegetable is good when you add cheese to it.
If you are watching your weight, treat the cauliflower like you would mashed potatoes. Mash the cauliflower, add a little milk and a pad of butter. Mix it all up and it will look like mashed potatoes at a fraction of the calories. I use this one all the time. it is good.
Directions
Preheat the oven to 350 degrees F.
Bring a large pot of salted water to a boil over high heat. Blanch the cauliflower for 2 minutes. Transfer the cauliflower to a buttered 9 by 13-inch baking dish and let cool, about 5 minutes.
In a small skillet over medium-high heat, brown the pancetta. Transfer to a small bowl and set aside.
In the same skillet, melt the butter. Add the flour and stir until combined. Continue stirring for 2 minutes to cook the flour. Slowly add the milk, stirring continuously until the milk has incorporated and there are no lumps. Add the garlic clove and red pepper flakes and stir the sauce over low heat until the mixture coats the back of a wooden spoon. Add the Parmesan, salt, pepper, nutmeg, and the reserved pancetta. Stir to combine. Pour the sauce over the cauliflower to cover. Top with a sprinkling of bread crumbs.
